I ate 10 year old cookies! I'm not crazy...or am I?
During the quarantine I know a lot of people have been baking like mad. I haven't done much baking as I don't want to eat all of the sweets, I know myself and I will eat too much if they are in front of me.
Today I was making dehydrated Yam treats for my dog (will share on a later post) and my son actually got jealous and said "Mom, you are making these treats for the dog but you don't make special treats for me." Ignoring the fact that I do everything for this child, as most parents do. I explained that I don't want him eating loads of sugar and he never eats the 'healthy' treats. But I still felt a little guilty that he was sad. They always seem to get you even when you know they're being ridiculous. I'm sure he's playing me like a fiddle.
My choices to cook or bake are all centered around what ingredients I already have. I found a lemon pound cake recipe that is supposed to make the cake just like at ⭐💵's (popular coffee place). Unfortunately it required sour cream which I don't regularly stock. Next I found a recipe to use cake mixes for cookies. Doesn't that sound sinful? All you need is the mix, eggs and oil. Sounds easy enough.
The lemon mix was the only one I had so I decided to give it a shot. After all, if they didn't turn out, no one needs to know, right? By the way the box and bag were completely sealed, no moisture or damage to the packaging.
Essentially you can use any cake mix. Ideas like Red Velvet with white chocolate chips, White Cake with M&M's, you get the idea. I settled on lemon cake mix and powdered sugar icing.
Preheat your oven to 350 degrees
Mix in a bowl:
1 cake mix
1/3 c. Vegetable Oil
1/2 c. Supplement (I didn't add anything else but this is where you could add chips, coconut, nuts, etc.)
Mix by hand, folding the cake mix with the wet ingredients. It should make a dough like batter.
Scoop your cookies out how you like them. I used a table spoon full and rolled them into balls with my hands, then dipped one side in powdered sugar.
The recipe I have says to bake for 5 - 6 minutes but I think it really depends on your oven. I ended up leaving them in for about 10 minutes but watched them closely the last 5 minutes. You want to pull them out before they brown.
The cookies turned out super fluffy and raised. The insides are perfect with a little doughy texture. I drizzled them with icing.
I have to say for 9 year old cake mix I was super surprised and how amazing these cookies turned out. Super decadent. I will totally make these for a party or event sometime (with fresh cake make mix 😉). In the meantime, the kid doesn't have to know mommy made him decade old cookies.
1/3 c. Powdered sugar
1 1/2 T. Water
While I'm sure it is unwise to recommend expired ingredients, at least you know it turned out amazing for me. Just in case you have that old box in the back of your pantry. I'd love to hear if you try this!
