Have a leftover night.....oh and don't tell my Hubby about the whole Pinterest, Facebook thing!

I cook quite often so we end up with a lot of leftovers, my husband usually takes them to work for lunch the next day but we still end up with all kinds of stuff in the fridge. I abhor (like that, it's my new word for the day) throwing out and wasting food so once in a while (when I'm feeling lazy and I haven't prepared a thing because I've been on Pinterest all day, just kidding I wasn't on Pinterest all day.....it was Facebook) anyway............I declare leftover night! My whole point of this was you can add to and modify your leftovers so it's not the same boring thing you had last night and everybody can have something different. Here's some examples:

Leftover chili, make some rice and serve it over the rice or warm some tortillas and have chili burritos.
Left over chicken, cut into chunks and put on a ceasar salad or whip up a quick chicken noodle soup with broth, noodles, veggies and the chunks of chicken. Make chicken salad, add mayo, onions, celery.
Leftover mac & cheese, add some milk to make it creamy again and then add some peas and tuna and you have a whole meal right there.
Leftover uncooked veggies, make a stir fry, serve over rice or noodles.
Leftover baked potatoes, shred into hashbrowns and have breakfast for dinner,you might have seen this in my Money Saving Ideas article.
Leftover pasta and marinara sauce, mix together put in a small baking dish with some parmesan or mozzarella cheese and and bake in the oven.
Leftover taco fixings, shred some more cheese and make quesadillas.
Leftover ham, make split pea with ham soup or make ham and scalloped potatoes.


 These are just a few that I use, what are your favorite recycled leftover meals?

  1. Growing up, leftovers went into a container in the freezer (a gallon zip-lock works well too). When it was full, Dad made STOOP (to thick for soup, too thin for stew). No batch is the same & it's a great way to use up small amounts of leftovers. Only remember one batch that didn't turn out.
